Good morning Luvs!
Hope you’re having a fabulous weekend and spending lots of time with all your favorite people! I’ve been feeling super tired lately and I’ve decided that I really need to make the commitment to myself to eat even better, so I can start feeling better! I figured the best way to do that is to seek the help of a professional! Because let’s face it, I have no idea what I’m doing when it comes to breakfast. Heck, most of you know that I eat pasta for breakfast 99% of the time. Dinner I’ve got covered, but I could definitely use some help with breastfast! Anyway, most people don’t have the money to pay a registered dietitian to help them with their meal planning. So at first I thought that I would reach out to a food blogger for help. While researching people (and getting recommendations from many of you!) I realized that working with a registered dietitian would be even better! That way we could work together to make yummy, healthy, and nutritious recipes not only for myself, but to share with all of you!
So I reached out to Taylor Johnson, RD, LDN. And she’s game to help us all live a better life through the food we eat! Taylor obviously knows her stuff and makes the most beautiful and delicious food! Take a minute to check out her website HERE, she has so many amazing recipes and explanations for why the food in all of the recipes is good for your body. So you’ll not only learn to cook some awesome food, but also learn a thing or two about the science of food in your body. When I was browsing her site, I saw this unicorn smoothie bowl that she made and it just looked like heaven on a plate! Or in a bowl 😉
So I asked her if I could share it on my blog with all of you! I made it yesterday by the way, and it is so good! It almost feels like I get to eat dessert for breakfast! Molly loves it too! I made extra yesterday so we got to gobble it up this morning as well (These photos are from when Taylor made it FYI). Hope you guys love it! HERE’S WHAT YOU DO
There are two bases to the smoothie. The beet smoothie and the vanilla chia seed pudding. As you can see in the photo below, it shows you how to put the smoothie bowl together (everything is labeled). And my favorite thing about this recipe? Zero cooking time! You basically just combine a bunch of good ingredients together in two batches and then top it with yummy fruit and bee pollen! 🐝 This dish would TOTALLY impress any guests you have over! It’s just so beautiful.
INGREDIENTS FOR BEET SMOOTHIE:
- 1/8 raw beet
- 1/2 cup frozen strawberries
- 1 frozen banana
- 3-6oz plain greek yogurt (optional to make into a meal)
- 3 tbsp hemp seeds
- 1 tbsp chia seeds
- 1/2 cup coconut water
Substitutions: swap out the greek yogurt for silken tofu to make this dairy free and vegan
Add all ingredients into a high speed blender. Combine ingredients until smooth and creamy. Make it a shake or make it a bowl by adding whole food toppings such as: blueberries, kiwi, whole grain cereal or coconut flakes.
VANILLA CHIA SEED PUDDING
INGREDIENTS FOR VANILLA CHIA SEED PUDDING:
- 2 cups of Vanilla almond milk
- 1/2 cup of chia seeds
- dash of vanilla extract
- dash of cinnamon
- Combine all ingredients and then chill it overnight (or until it forms pudding thickness). Add more or less almond milk to make it your desired consistency.
- Dragon Fruit
- Bee Pollen (Not needed but makes you feel fancy!)
Use a melon ball scoop for the dragon fruit and zigzag cut the kiwi! But really you can add any fruit you’d like! I recommend serving it in a wide but shallow bowl so you can see all the prettiness but not have to put a TON in the bowl 🙂 And if you have a gold spoon (like in the pic below) it makes it feel extra special when you serve it right?!
